Origin
This coffee comes from Chiapas, in southern Mexico, where it is grown at altitudes between 1,000 and 1,700 metres. The word “Altura” in fact means “height”. It is organically grown and harvested from November to January.
On the palate
The cup is suave and creamy. Milk chocolate and praline lead, then a delicate, fresh acidity extends the tasting. The finish is indulgent and lingering.
How to brew it
It is an excellent coffee for the moka pot, where it becomes round and chocolatey. It also works very well as filter coffee.
Moka pot method: fill the base with water up to the valve, add the ground coffee to the filter basket without tamping, then heat over medium heat. Take the pot off the heat as soon as the coffee starts to gurgle, to avoid bitterness.
Order whole beans for a bean-to-cup coffee machine (De’Longhi, Krups, Philips…) or a grinder, or choose the grind that suits your brewer: espresso machine, moka pot, filter or French press.
