More and more coffee lovers in Morocco are switching to whole beans. The reason is simple: a whole bean keeps its aroma much longer than ground coffee. You still need to know which to choose. Here's what makes good whole bean coffee, and our recommendations for your taste.
Which coffee beans for which profile?
Good whole bean coffee isn't necessarily the most expensive. It's the one that combines four qualities: 100% arabica, a precise origin, a medium roast and a recent roast date. Once these basics are in place, your taste makes the difference. Our recommendations by profile:
- For every day, a smooth coffee: Brazil Santos, rounded and low in acidity.
- For those with a sweet tooth: Mexico Altura ORGANIC, milk chocolate and hazelnut.
- For fans of fruity coffee: Ethiopia Moka Sidamo ORGANIC or Kenya AA.
- For a bold coffee: Sumatra Gayo Mountain ORGANIC.
- For a special occasion: Jamaica Blue Mountain, one of the most sought-after coffees in the world.
To judge coffee quality objectively, professionals use the SCA score, out of 100: above 80, it counts as specialty coffee. It's all explained in Specialty coffee: what does the SCA score mean?. And to see the best coffee beans in Morocco according to our customers, head to our best sellers.
Why buy whole bean coffee?
As soon as it's ground, coffee oxidises and loses its aroma within a few days. The whole bean protects it. Grinding just before brewing gives a more fragrant cup. And you can match the grind to your brewer. The details in Whole bean or ground coffee: which to choose?.
5 criteria for choosing well
1. 100% arabica
Arabica offers more aromatic nuance and less bitterness than robusta. Be wary of packs that just say "coffee" or "blend".
2. A precise origin
A single-origin coffee comes from one country, sometimes from a single region. It has a recognisable taste: fruity for Kenya, chocolatey for Mexico, spicy for Sumatra. Our guide: Single-origin coffee: flavour guide by country.
3. The right roast
A medium roast reveals the aromas specific to each origin. Too dark, and it buries everything under bitterness. All our coffees are medium roast. To learn more: Coffee roast levels: light, medium or dark?.
4. Freshness
Coffee is at its best a few days to a few weeks after roasting. A bag with a degassing valve lets carbon dioxide out without letting air in.

5. Even beans
Pour a few beans into your hand. They should be even in size and colour, with no broken, blackened or very oily beans.
Which coffee beans for your taste?
