Searches for "organic coffee" are growing in Morocco. Behind the label, what really happens on the plantation? And can you taste it in the cup? Here's an honest answer.

Organic coffee is often grown under a canopy of trees, by smallholders. Yields are lower, which explains a slightly higher price.

Does organic coffee taste better?
Not automatically. The label covers how the coffee is grown, not how it tastes. A poorly roasted low-altitude organic coffee will still be average. On the other hand, many organic coffees come from small high-altitude farms and are hand-picked. These are exactly the conditions for good coffee. That's why you'll find some superb organic coffees.

- Stick with 100% arabica. It's the best starting point for a refined cup with little bitterness.
- Choose your cup profile. Fruity with Ethiopia, indulgent with Mexico or Peru, bold with Sumatra.
- Take care with storage. Organic coffee oxidises like any other: airtight container, away from light and heat.
The roaster's tip: if you can't decide, start with a rounded high-altitude organic coffee, then compare it with a more distinctive origin. Tasting two coffees side by side shows you what origin brings, far more than the label alone.
